Ooh La La Leftovers

 

 

If you have leftover coleslaw, try adding it to a can of tuna. It stretches the tuna and adds a wonderful, crunchy texture.

If you always have extra pot roast, make sure you make some extra veggies with it and use the leftovers to make a great Beef Barley Soup. Shred the meat and simmer in a 2-quart mixture of beef bouillon and beef broth. Stir in barley and once the barley is cooked, add the leftover diced vegetables.  Fast, easy and hearty!

Make tasty potato patties with leftover mashed potatoes.  Add to potatoes, a can of drained tuna, 1 egg and some chopped onion. Form patties and fry in butter. Yummy!

Turn your leftover pastry into cute little cookies.  Roll out the pasty on into a rectangle, spread with butter and sprinkle with sugar and cinnamon. Roll it up jelly-roll style and slice and bake.  The cookies look like tiny cinnamon rolls!

If you have leftover French fries, cut them into squares and add them to soups. You can't really tell the difference from regular potatoes.

Store all your leftover vegetables in a freezer bag, adding whenever you have some. When the bag is full, put the vegetables along with a can of beef broth and a can of tomatoes in a slow cooker and heat.  Makes an excellent vegetable soup.

Put leftover beef or pork roast in a food processor and use the meat to make barbecue sandwiches. Add bottled barbecue sauce and a few drops of Worcestershire sauce.

Whenever you bake potatoes, make a few extra and try this tip.  Peel and dice them, sauté in butter with minced garlic and garlic pepper seasoning.  Makes a flavorful hash brown dish for breakfast or supper.

When you have leftover meatloaf, add to soft tortilla shells along with shredded cheese. Microwave them until the cheese is melted and add your favorite toppings.  Lettuce, tomatoes, sour cream or salsa. Makes a terrific lunch.

Add beaten eggs and Parmesan cheese to leftover pasta and sauce. Bake in the oven until heated through or cook in a skillet.  Delicious!

Cut leftover angel food cake into 2" square pieces. Gently mold into balls. Dip into a fluffy white frosting. Roll in moist shredded coconut and make Coconut Balls. Tint coconut, if desired.

Stir a little leftover oatmeal into a stew for added flavor and thickening.

Reheat mashed potatoes in greased mini muffin pans topped with cheddar cheese for cute little side dishes. Cook until mashed potatoes are browned on the outside so they hold their shape.  Kids love this one!!

Make toast cups - Cut crusts from thinly sliced stale bread and brush generously with melted butter. Press into large muffin cups. Toast in 350° oven for 10-15 minutes. Fill with creamed vegetable or meat mixture or anything you have left over!

To freshen French of Italian bread or hard rolls, sprinkle the crust with a few drops of ice water and place bread or rolls in a preheated 350° oven for 10 minutes.

Mix 2/3 cup chopped, leftover roast beef with 1 cup mashed potatoes, some chopped onion and a dash of pepper. Shape the mixture into patties, coat with cornmeal and fry in a bit of oil until brown. Yummy!!

  If your day old muffins are losing their appeal, scoop out a bit of the centers, fill with shredded cheese or jam and dot with butter. Heat until they are warm. Delicious!

Combine leftover cranberry sauce with softened cream cheese and a pinch of nutmeg. Spread the mixture on top bread and top with slices of leftover turkey for tasty sandwiches.

Slice leftover grilled hot dogs, bratwurst, Italian Sausage or whatever you have on hand into 1" pieces. Cover the slices with barbecue sauce and bake until hot.  Put a pretzel stick in each one for an economical, tasty appetizer or snack. Serve with crackers.

Cut leftover bread or rolls into chunks, then layer alternately with sliced vegetables like zucchini, tomatoes, peppers and onions, plus any leftover meat and shredded cheese. Top with seasoned bread crumbs and melted butter and bake at 350º until heated through.

Cut leftover baked potatoes into quarters, dip in melted butter, roll in parmesan cheese and bake at 350º for about 20 minutes of until they're golden brown and crispy. 

If you have part of a Cheese ball left over from a party, break it off into little pieces and roll them into tiny balls and stuff them into mushroom caps. Roll them in flour and cook in a oil for a quick and hearty snack or appetizer.

Take leftover meatloaf and cut into cubes and combine with tender cubes of boiled potatoes and fry in oil until browned. Serve with ketchup and dill pickles for a nice old fashioned lunch.

Combine leftover au gratin potatoes with chopped onions, carrots and celery. Add a milk to make a soup and voila! you have a nice, flavor rich chowder.

If your roast beef was originally cooked in a mushroom and onion mix, just add 1 can of mushroom soup to leftover meat stock and cut up leftover meat into small pieces. Server over cooked noodles for a delicious and different meal.

When you have leftover sausage and vegetables, stir them into prepared macaroni and cheese for quick and tasty meal.

Simmer chopped onions and celery in butter until tender. Stir them into leftover mashed potatoes and enough milk to make a broth. Heat the mixture and top with bacon and shredded cheddar cheese for a tasty soup.

Chili Tacos: For quick, tasty tacos, spoon leftover chili into taco shells and top with lettuce, tomatoes and cheese.

Meat Loaf Sandwich filling: Crumble up leftover meatloaf and mix it with relish, mayonnaise, mustard and ketchup. Great lunch!

Broccoli: Slice leftover broccoli and cook with  julienned carrots for a colorful side dish.

Mac and Cheese Makeover : Create a new side dish by mixing canned tomatoes and chili powder with leftover macaroni and cheese.

Macaroni Salad: add tuna and frozen peas to your leftover macaroni salad and have a nice hearty lunch.

Souper Sausage Soup: Cut leftover grilled bratwurst into bite-sized pieces and simmer them in water, V-8 Juice, a can of great northern beans and some mixed vegetables. Makes a wonderful, savory soup!

Ham helper: Cube leftover ham and combine it with cubed cheese, chopped hard-boiled eggs and diced onion and celery. Also add any uncooked vegetables and some ranch dressing and toss with lettuce and macaroni. Wonderful hearty salad!

Chili Stretcher - If you don't have enough chili to go around a second time, serve it over rice topped with cheese. Goes a lot further and seems like a new meal.

Sloppy Joe Saver - Spread sloppy joe meat on toasted English muffin halves and top with slices of cheese. Broil open faced for a toasty new taste!

Savory mashed potatoes: Cook and crumble several strips of bacon. In muffin cups, put a little of the bacon drippings and a slice of onion. Fill the cups with potatoes, then top with cheddar cheese and crumbled bacon. Bake them at 375º until heated.

For crispy potato waffles: Grate leftover baked or boiled potatoes into a waffle batter, cook until browned, remove.  Top with syrup or creamed chicken.

Pancake rollups: If you have leftover pancakes, eat them as snacks. Sprinkle them with sugar and roll them up to munch on the go!

Wild Rice rerun: if you have wild rice or pilaf after making a casserole, add it to scrambled eggs. Yum!

Sloppy Joe2: Use your leftover sloppy joe meat as a tasty and easy pizza topping. 

Sloppy Joe3: Spread leftover sloppy joe meat in a casserole dish. Place cheese over the meat and top the cheese with refrigerator biscuits. Bake until the biscuits are done. You'll want to make extra sloppy joe meat just to make this casserole.

Beef and Noodles: For leftover beef and noodles add a large can of tomato juice and a can of corn and and can of green beans. Serve with bread for a satisfying meal.

Beef stretcher: Thicken beef broth to make a gravy then add cut up pieces of beef and French style green beans. Serve over mashed potatoes or rice. It's a satisfying supper.

Meat loaf to the rescue: Dip leftover slices of meat loaf into a beaten egg, then coat with bread crumbs. Fry in butter or margarine on both sides until hot and golden. 

Mashed potato mix-up: Mix leftover mashed potatoes with an egg, chopped green onion and Parmesan cheese. Put in a casserole dish and sprinkle with additional Parmesan cheese and heat in the oven until golden brown.

Spaghetti saver: Combine leftover spaghetti sauce and noodles with cheddar and parmesan cheese. Bake at 350º until heated and the cheese melts. Tastes like a new dinner.

Mashed potato makeover: mashed potatoes taste like twice-baked when you heat them with cheddar cheese and dried minced onion.

Stuffed Peppers: Make stuffed peppers with leftover pot roast or meat loaf. Mix up the meat with some onion and ketchup. 

Hearty Hot dogs: When you have left over mashed potatoes, fixed stuffed hot dogs. First stir some chopped onion, parsley, pimientos and pepper into the potatoes. Slit the boiled hot dogs, stuff with the potato mixture, dot with butter and broil until lightly browned. Kids gobble these up!

Perfect pasta: If you have leftover pasta, fry diced bacon and add pasta, stewed tomatoes, green onions and a mixture of shredded cheeses. It's delicious!

Chili Dip: With leftover chili, stir in plain yogurt and cheddar cheese or Velveeta to make a hearty dip for tortilla chips.

Souper Mac-n-Cheese: Add leftover macaroni and cheese to tomato soup. It's a tasty new lunch.
